Pineapple, Pepper & Shrimp Stir-Fry

Makes 2 servings


2 teaspoons canola oil
½ pound shrimp, peeled and deveined
1 tablespoon Fajita Magic®, in all
½ cup julienned onions
¼ cup julienned red bell pepper
¼ cup julienned yellow bell pepper
¼ cup diced pineapple
1 teaspoon chopped garlic
1 tablespoon chopped cilantro
¼ cup halved cherry tomatoes
¼ cup chicken stock
¼ cup Magic Louisiana Red Pepper Marinade
2 tablespoons unsalted butter

How To Prepare

Heat the oil in a medium sized non-stick skillet on medium-high heat. When the oil starts to shimmer, add the shrimp and 1 teaspoon of Fajita Magic® and cook for 2 minutes stirring and flipping the shrimp as needed. Add the onions, bell peppers, pineapple, and garlic and sauté for 3 to 5 minutes. Next add the cilantro, cherry tomatoes, stock, and Louisiana Red Pepper Marinade. Stir well and cook for 2 to 3 minutes, or until sauce thickens slightly. Finally, add the butter and stir well until melted and fully incorporated into the sauce. Serve immediately.
