Fried Alligator with Honey Mustard Sauce

Ingredients

HONEY MUSTARD SAUCE:
¼ cup yellow mustard
2 tablespoons + 2 teaspoons Dijon mustard
⅓ cup honey
⅓ cup mayonnaise
1 tablespoon Magic Pepper Sauce®
1 tablespoon Magic Creole Seasoning®

FRIED ALLIGATOR:
2 tablespoons yellow mustard
1 tablespoon Magic Pepper Sauce®
1 egg
3 tablespoons Magic Creole Seasoning®, in all
1 lb alligator tail meat, sliced into thin pieces
½ cup all-purpose flour
½ cup cornstarch
1 cup corn flour
¾ cup corn meal

oil for frying

How To Prepare

HONEY MUSTARD SAUCE:
Add all the sauce ingredients to a bowl and whisk until fully combined. Store in the refrigerator until ready to use.


FRIED ALLIGATOR:
Mix the mustard, Magic Pepper Sauce®, egg, and 1 tablespoon of Magic Creole Seasoning® in a mixing bowl. Whisk to combine. Add the alligator, mix to coat, cover, and refrigerate for a few hours.

In a separate mixing bowl, combine the remaining Magic Creole Seasoning® with the flour, cornstarch, corn flour, and corn meal. Set aside until ready to fry.


Heat oil in pot or deep fryer to 350°F. While heating, pour the marinated alligator into a colander to strain excess liquid. Transfer the alligator into the reserved seasoned flour and toss well to coat.

Carefully add to oil, and fry until golden brown, about 4 minutes (work in batches, if necessary, to avoid overcrowding).

Remove from fryer to a paper towel lined plate or pan to drain.

Serve hot with Honey Mustard Sauce.
