Mango & Shrimp Stir-Fry


Makes 4 to 6 servings


1 tablespoon olive oil
1 pound shrimp, peeled and deveined
½ cup medium diced squash
½ cup medium diced zucchini
¼ cup small diced red bell pepper
¼ cup small diced yellow bell pepper
¼ cup small diced green bell pepper
½ cup medium diced red onions
1 tablespoon Sweet Basil & Tarragon Salt-Free Sugar-Free®, in all
½ cup halved cherry tomatoes
½ cup medium diced mango
1 teaspoon fresh squeezed lime juice
1 teaspoon orange juice

How To Prepare

Heat oil over high heat in a non-stick sauté pan until it starts to shimmer and almost smoke. Add the shrimp, squash, zucchini, bell peppers and onions, plus 1 teaspoon of Sweet Basil & Tarragon. Cook for 4 to 5 minutes, constantly stirring and shaking the pan. Add the cherry tomatoes and mango, and cook for 30 more seconds, continuing to shake the pan back and forth. Remove from heat and add the lime juice, orange juice, and remaining seasoning. Mix well and serve immediately.
