Zucchini Bread

Makes 1 loaf or 12 muffins

Ingredients

1½ cups grated zucchini, lightly packed (do not drain liquid!)
1 cup Sweetie Magic®
¼ cup packed light brown sugar
½ cup unsweetened applesauce
⅓ cup vegetable oil
2 large eggs
1 teaspoon vanilla extract
1½ cups all-purpose flour
½ teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt

How To Prepare

Preheat oven to 350°F. Spray a 9x5-inch loaf pan with cooking spray.

In a large bowl, add the zucchini, Sweetie Magic®, brown sugar, applesauce, oil, eggs, and vanilla. Whisk until well combined.

Add the flour, baking powder, baking soda, and salt. Stir just until no dry flour remains, but do not overmix.

Pour the batter into the loaf pan. Bake for 50 to 55 minutes, or until a toothpick inserted into the center of the bread comes out with only moist crumbs on it.

Remove from oven and allow to cool in the pan for 10 minutes. Remove from the pan and transfer loaf to a wire cooling rack to cool completely before slicing.

MUFFINS: Place liners in muffin tray. Using a scoop, fill batter ¾ way. Bake for 22 to 25 minutes or until a toothpick inserted into the center of the muffins comes out with only moist crumbs on it. Remove from oven and let cool before serving.
